Marcelle’s Flour Blend sugar, baking powder baking soda, cinnamon, xanthan gum salt

What you need to supply: Mixer, Muffin tin., 1/2 CUP RAISINS, 1/2 CUP WALNUTS, 2 CUPS SHREDDED ZUCHINNI, 3 EGGS, 1 CUP VEGETABLE OIL, 1/4 MOLASSES, 2 TSP VANILLA EXTRAC

SIFT FLOUR BEFORE USING, SIFT 1 bag of Marcelle’s dry Zucchini Muffin Mix in a bowl add eggs, vegetable oil, molasses, vanilla, grated zucchini, and add raisin/nut, mix well. Bake at 350 F for approximately 30 to 40 minutes (depending on your oven). Use a tray that makes12 muffins Spray pan. do not overfill cups. This recipe does not rise much.

The molasses makes this very moist muffin, the raisins and walnuts add to the texture.
