Ingredients: Fava, corn and rice flour, tapioca, potato starch, salt.

What you need to supply: Pie shells, 7 TBL ICE COLD WATER, 2 CUPS LARD, 1/4 CUP APPLESAUSE

IMPORTANT TO USE ICE COLD WATER FROM REFRIDEGEATORADD DRY MIX TO BOWL, CUT LARD INTO SMALL PIECES AND MIXUNTIL IT BECOMES SMALL CLUMPS. NOW REFRIDGERATE TAKE 5 CUPS OF THIS MIXTURE AND BREAK DOWN INTO PEA SIZECLUMPS, ADD 1/4 CUP OF APPLESAUSE AND 7 TBL OF ICE COLDWATER. MIX UNTIL PASTRY BECOMES SMOOTH. ROLL DOUGH ON A WELL FLOUR DUSTED COUNTER, ROLL DOUGH AND PLACE IN PIE SHELLS, MAKES 2 PIE BOTTOM AND TOPS IN 9 INCH PIE SHELLS YOU CAN FREEZE DOUGH IF YOU LIKE UP TO A MONTH

The pastry is easy roll out and stays together, when baked it is flaky as a pie crust should be.
